Spinach Recipes

Two ounces of fresh spinach provides 100% of your daily needs for vitamins A and K, and it contains high-quality proteins! I guess Popeye the Sailor Man was onto something (though I like to think any of the spinach recipes below beat eating it straight out of a can). 

When buying fresh spinach, choose leaves that are crisp and dark green. Avoid those that are limp or spotted. Store in a plastic bag or container, and wash just prior to use. Eat within 3-5 days. Frozen works well with Spinach Smoothie recipes, and often costs far less than fresh.
